Dried Rabodi is a quintessential traditional food from the Marwar region of Rajasthan. It is a brilliant example of “desert survival” culinary logic—creating a shelf-stable “vegetable” out of basic grains and dairy that can last through harsh summers when fresh produce is unavailable.

Rabodi consists of small, thin, crisp flakes or sheets made by cooking a fermented mixture of buttermilk and grain flour (most commonly maize/corn flour, though bajra or wheat are sometimes used). The mixture is cooked into a thick paste, spread out into thin sheets, sun-dried until brittle, and then broken into bite-sized pieces for long-term storage.
